Red beans and rice is traditionally made with small red beans, but if you can't find them in your area, you can use red kidney beans (dark or light). You'll need one pound of dry beans for this recipe. Soak the beans in water (make sure to use twice as much water as beans) overnight.

Steps to make Red Beans and Rice:
  1. Chop up onion and mince garlic then brown in skillet in olive oil.
  2. Drain two cans of kidney beans and pour into pot for cooking.
  3. Put tomato paste into pot with beans. Pour the red wine into the can and pour into the pot with beans and tomato paste.
  4. Stir up the beans, wine, tomato paste and then add the water.
  5. Stir the ingredients together well and add the browned onions and garlic. Add Cajun seasoning to taste. This is based upon your tolerance to spicy food. If you cannot find Cajun seasoning, add some Chipotle Tabasco sauce to taste.
  6. Bring the mixture to a boil. Once boiling, reduce heat and simmer for approximately 10 or 15 mins until the beans get the consistency you prefer. I prefer a saucy consistency.
  7. Slice andouille sausage into thick slices and cook in skillet used for onions and garlic.
  8. Once sausage is cooked, add into the beans and sauce. Continue to simmer for another 5 mins.
  9. Cook rice.
  10. Serve by placing rice onto plate/bowl and then beans/sausage on top. Enjoy!

No tomatoes are in real red beans and rice. I live in Louisiana and these were not even close to how they are served down south. They tasted OK, but I was disappointed in the results. Why red beans and rice on a Monday? As the apocryphal story goes, Mondays were traditionally laundry days, and women needed a dish that could cook itself, unattended, while they were busy scrubbing clothes.
