  1. Husk and rinse tomatillos. Cut in half. Put in a lg baking dish. Add onion garlic and peppers with the tops cut off.
  2. Drizzle olive oil over all. Bake at 350, 35-40 min. Stir every 10min. Cook until tomatillos are soft and everything has a good char
  3. Remove from oven and let cool. When cool add all from baking dish including juices to a blender. Blend add cilantro and blend until smooth.
  4. Remove to a bowl. Add rest of ingredients and mix. Chill and serve.
